Raw Vegan Creamy Mini Cake

If you crave for a raw vegan cake that does not require a lot of ingredients, search no more! Here is one creamy and tasty mini cake :)

Ingredients

  • 50 g walnuts
  • 50 g almond
  • 70 g shredded coconut
  • 5 x medjool dates
  • 1 tsp vanilla extract
  • 2 tbsp cashew butter
  • 100 g coconut cream
  • 100 ml coconut oil
  • 50 ml oat milk
  • 50 ml maple syrup
  • 1 pinch salt

Method

  1. Mix the first 5 ingredients in a food processor into a sticky mixture. Spread this mixture into a 10cm diameter springform with baking paper on its bottom. This step ensures you can extract it easier.
  2. Mix the rest of the ingredients in a high speed blender and pour on top of the base. Add it in the freezer for 2h until it hardens a little. Keep it in the fridge the entire time. It can be topped with pecan nuts and raw vegan chocolate. Enjoy!
