This pastasalad is incredible tasty, easy to make and it's perfect for lunch or dinner. Make sure to make a lot of this salad, because it is very good to have in the lunch box, the next day.
Ingredients
- 250 g pasta penne
- 500 g chicken breast
- 200 g bacon
- 1 tsp red pepper powder
- 1 tsp garlic powder
- 1 x red onion
- 1 x romaine salad
- ½ x cucumber
- 2 x tomato
The salad:
- 6 tbsp mayonnaise
- 3 tbsp sour cream
- 2 tbsp lemon juice
- 3 tsp mustard
- 1 tbsp sriracha
- 1 handful parsley
The sauce:
Method
- Boil the pasta in well-salted water. Rinse it in cold water and strain it.
- Cut bacon into small pieces and fry on medium-high heat until golden and crispy. Transfer the bacon to a plate lined with kitchen paper to remove excess fat.
- Make cuts in the chicken fillets so that they are a little thinner and easier to cook through. Sprinkle paprika powder, garlic powder, salt and pepper on both sides. Fry the chicken fillets in a little oil in a frying pan on medium to high heat. Fry until they have a nice golden crust on both sides and the chicken is cooked through. When done, let the chicken fillets rest on a plate.
- Rinse the salad and cut it into slightly coarse pieces. Cut red onion into small pieces - cucumber and tomato into slightly large cubes. Cut the fried chicken fillets into larges cubes.
- Finely chop parsley and mix it together with the other ingredients for the dressing.
- Mix the pasta, chicken, bacon and red onion well together with the dressing, before turning in the lettuce, tomatoes and cucumber. You're welcome!
