Taco Salad

Ingredients

  • ¼ pack taco spice mix
  • 50 g lettuce
  • 35 g corn
  • 1 pinch chipotle spice
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 1 dl walnuts
  • 1 dl mushroom
  • 1 pinch red pepper spice
  • 1 pinch cumin
  • 1 tbsp lemon juice
  • ½ x tomato
  • ¼ x cucumber
  • 20 g tortilla chips
  • ½ dl black beans
  • ½ dl fresh coriander
  • ¼ dl plant-based yoghurt
  • ½ tbsp plant-based mayonnaise
  • ¼ tsp agave sirup
  • ¼ tsp mustard

Method

  1. Chop all the salad ingredients and assemble in a big bowl.
  2. Make the dressing by mixing together all the ingredients.
  3. Add the taco mixture to the salad and top with dressing. Enjoy!
  4. Make your vegan taco meat by frying chopped walnuts and mushrooms in a few tbsp water for 5 minutes. Add the taco spice mix and a few tbsp water. Cook until the liquid has absorbed.
