Spinach Dip with Carrot and Yogurt

ingredienser

  • 2 x carrot
  • 250 g spinach
  • 1 clove garlic
  • 3 tbsp olive oil
  • 2 pinch salt
  • 2 pinch black pepper
  • 1 handful walnuts
  • ½ tsp chili flakes
  • 130 g plain yogurt

fremsgangsmåte

  1. Grate the carrots. Rinse and coarsely chop the spinach. Mince the garlic.
  2. Heat 2/3 of the oil to a frying pan and add the carrots. Fry for a few minutes on medium heat.
  3. Add the spinach and the garlic, and season with salt and pepper. Add a lid and let simmer for 5 minutes. Set aside and allow it to cool slightly.
  4. Meanwhile, fry the walnuts in the rest of the olive oil and add the chili flakes.
  5. Mix the yoghurt to the spinach.
  6. Top with fried walnuts and the oil in which the walnuts are fried.
