
Ingredients
- 2 x carrot
- 250 g spinach
- 1 clove garlic
- 3 tbsp olive oil
- 2 pinch salt
- 2 pinch black pepper
- 1 handful walnuts
- ½ tsp chili flakes
- 130 g plain yogurt
Method
- Grate the carrots. Rinse and coarsely chop the spinach. Mince the garlic.
- Heat 2/3 of the oil to a frying pan and add the carrots. Fry for a few minutes on medium heat.
- Add the spinach and the garlic, and season with salt and pepper. Add a lid and let simmer for 5 minutes. Set aside and allow it to cool slightly.
- Meanwhile, fry the walnuts in the rest of the olive oil and add the chili flakes.
- Mix the yoghurt to the spinach.
- Top with fried walnuts and the oil in which the walnuts are fried.
