Hamburger with Feta Cheese Cream, Pickled Red Onion and Oven-baked Potatoes

Simple classic burger plate with a delicious feta cheese dressing to top off the taste. If you prefer, you can replace oven-baked potatoes with a salad or French fries. In this recipe, we have chosen to use ready-made hamburger. You can make the hamburger from scratch too - I strongly recommend Nina Weens, Gode Greier's Smashburger! Look it up here in Sulten.

  • 1 x hamburger
  • 1 x red onion
  • 1 dl water
  • ½ dl sugar
  • ½ dl apple cider vinegar
  • 2 x potatoes
  • 2 tbsp olive oil
  • ½ tsp bbq seasoning with seaweed from lofoten
  • 1 clove garlic
  • 1 tbsp butter
  • 2 dl sour cream
  • 100 g feta cheese
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 x burger buns
  • 1 handful summer crisp lettuce
  • 4 x plum tomato

  1. Place the hamburger on the counter for the meat to become room temperature before frying.
  2. Make pickled red onion this way: Peel and cut red onion into slices. Boil water and mix in sugar and apple cider vinegar. Turn off the heat. Stir until the sugar dissolves. Place the red onion to a clean glass and cover with leek. Set aside to the refrigerator. This will be ready in 30 minutes.
  3. Set the oven to 225 degrees celsius.
  4. Rinse and slice potatoes into boat shape. Place them on a baking tray with baking paper. Add olive oil and barbecue seasoning. Mix well.
  5. Bake the boats for 20–30 minutes. Check with a fork if they are cooked through. Feel free to use hot air in the last few minutes to get an extra crispy surface.
  6. Heat a frying pan with neutral oil.
  7. Slice the garlic cloves. Place the hamburger in the pan and cook on both sides together with the garlic cloves on a high heat. Lower the heat to medium and stir in the butter. If you have some fresh herbs, you can add some of this too.
  8. Scoop over the butter and cook until the burger is cooked through. About 4 minutes on each side.
  9. With an immersion blender, mix together the sour cream, feta cheese, salt and pepper. If you have fresh herbs, you can add some. Basil tastes very good with this dressing. If you follow the weekly menu this dish is part of, you should use this feta cheese cream to make potato salad later in the week.
  10. Heat hamburger buns in the oven a little, and slice the plum tomatoes. Rinse the lettuce leaves.
  11. Now you are ready to assemble the burger with base, dressing, lettuce, hamburger, tomato, pickled red onion and top. Serve with oven-baked potatoes. Enjoy!
