Ingredients
- 100 g sushi rice
- 1 tbsp rice vinegar
- ⅓ tsp sugar
- pinch salt
- 100 g salmon of sashimi quality
- ¼ x mango
- ¼ x avocado
- ½ x spring onion
- ⅕ x cucumber
- 1 tbsp pickled ginger
- 2 tbsp soy sauce
Method
- Boil sushi rice according to the instructions on the package, and season with rice vinegar, sugar and salt.
- Slice the salmon, mango, avocado, cucumber and spring onion and layer in a bowl with the rice as pictured.
- Serve with pickled ginger and soy sauce.
