Any apples you need to use up? This recipe is for you. Please try this Norwegian apple cake with vanilla ice cream on the side - you won't regret it.
Ingredients
- 6 x apple
- 200 g butter
- 3 x eggs
- 2 dl sugar
- 3 dl plain white flour
- 2 tsp baking powder
- 1 tsp vanilla sugar
- ½ tsp cinnamon
- 2 tbsp pearl sugar
Method
- Peel the apples and cut them into thinly sliced boats. Add to a bowl with cold water to prevent the apples from turning brown.
- Brown the butter in a saucepan until you are left with a nutty brown colour. Let cool.
- Whisk eggs and sugar till light and fluffy.
- Fold in the flour, baking powder, vanilla sugar and cinnamon. Then add the cooled browned butter and half of the apples.
- Add the mixture to a baking dish where the cake still have room to rise to double its size in the oven. Top with the rest of the apples, a sprinkle of pearl sugar (you can also use regular granulated sugar if you don't have pearl sugar on hand) and some cinnamon. Bake in the oven at 180 degrees celsius for 30 minutes.
