Tart Apple Cake

Tart and 💦moist💦 apple cake for Sunday coffee. In this recipe I have used small Norwegian apples to get the good sour taste, however any tart apple you have available works just fine.

Ingredients

  • 50 g butter
  • 2 x eggs
  • 2 dl kefir
  • 1 dl sugar
  • 200 g plain white flour
  • 1 tsp baking powder
  • 1 x vanilla bean
  • 5 x apple
  • 1 tsp cinnamon
  • 50 g hazelnuts
  • dl brown sugar
  • 1 pinch salt

Method

  1. First melt the butter, then add the eggs and kefir and whisk together until frothy.
  2. Then add sugar, plain white flour, baking powder and the seeds from the vanilla bean into the mixture.
  3. Preheat the oven to 180º C.
  4. Cut apples into small slices and caramelize them in a pan with sugar and cinnamon.
  5. Coarsely chop the hazelnuts and caramelize in a pan with brown sugar and a pinch of salt.
  6. Pour the cake batter into a bread pan and place apple slices and hazelnuts on top. Gently press them into the batter. Bake the cake at 180°C for 40-50 minutes.
