Cod Tacos with Guacamole and Nectarine Salsa

Ingredients

  • 1 x avocado
  • 1 clove garlic
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ x lime
  • 150 g cod fillet
  • ½ pack taco spice mix
  • ½ dl water
  • 2 x nectarines
  • ½ x tomato
  • ½ x red onion
  • ½ pack tortillas
  • ½ pack rocket

Method

  1. Start by making the guacamole. Mash the avocado in a bowl. Add minced garlic, and season with salt, pepper and lime juice. Set aside.
  2. Cut the cod fillet into cubes and add to a frying pan, together with taco seasoning and a small splash of water. Cook until the fish begins to flake.
  3. Dice nectarine, red onion and tomato, and mix together in a small bowl. Feel free to add some finely chopped chili.
  4. Heat the tortillas according to the instructions on the package.
  5. Fill tortillas with rocket, nectarine salsa, cod and guacamole. Top with a few slices of lime.
