 Bidos / biđos - reindeer casserole

Bidos is the Sami national dish made from reindeer meat that the Sami serve on special occasions. The Sami are the indigenous people of the Nordic countries. Reindeer blade or leg is well suited to this dish. Bidos should be cooked for a long time, so the meat becomes tender and tasty. Serve with traditional Sami bread - gahkko and raw stirred lingonberries.

  • 800 g reindeer meat
  • 4 tbsp plain white flour
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 x carrot
  • 2 x potatoes
  • 1 x yellow onion
  • 10 dl water
  • 4 tbsp butter

  1. Cut the meat into large cubes and place in a bowl.
  2. Ad flour, salt and pepper to the bowl and mix it well with the reindeer meat.
  3. Peel and cut the onion, potato and carrot into rough pieces. Put aside.
  4. Measure up 1 liter of water and place it ready on the workbench.
  5. Put the butter in a pot, and put the hob on full heat.
  6. When the butter is warm, put the meat in the pot and turn the hob down to medium heat. Make sure the flour doesn't burn! Stir regularly.
  7. When the meat is browned evenly on all sides, add the vegetables and water so it covers the meat and vegetables. Gradually add more water if needed.
  8. Let it simmer for about 1 hour.
  9. Season with salt and pepper.
  10. Serve bidos in deep bowls with traditional Sami bread - gahkko and raw stirred lingonberries.
