Ingredients
- 4 x potatoes
- 2 x carrot
- 1 clove garlic
- ¼ dl cream
- 1 x beetroot
- ½ x yellow onion
- 3 tbsp butter
- 1 x cod fillet
- ¼ tsp salt
- ¼ tsp black pepper
Method
- Dice potatoes, carrots and garli into cubes.
- Add the chopped vegetables to a pot of water and cook until tender. Begin the next step in while the vegetables are cooking.
- Dice beetroot and onion, and fry in a frying pan together with butter until the onion is soft. Set aside.
- In the same frying pan, fry the cod fillet for about 2-3 minutes on each side. Season with salt and pepper on both sides. The fish is done when it starts to flake.
- Pour off the water on the cooked vegetables. Add a tablespoon of butter and a splash of cream, and mash it all with a fork. Season with salt and pepper.
- Serve the root mash and cod fillet on a plate, and top with the beetroot and onion mixture.
