Ingredients
- 1 x sweet potato
- 2 x fish cakes
- 1 tbsp ketchup
Method
- For this dinner we'll be using the rest of the leftover coleslaw from in the weekly menu.
- Cut the sweet potato into slightly thicker-than-fries fries (they shrink when baked). Sprinkle with salt and pepper and bake in the centre of the oven at 225 degrees celcius for 15-20 minutes.
- Cook the fish cakes in a pan until golden on both sides.
- Serve the fish cakes with sweet potato fries, leftover coleslaw and ketchup.
