Chicken Caesar salad with Homemade Croutons

Ingredients

  • 2 slices bread
  • 2 tbsp olive oil
  • 1 dl crème fraîche
  • 1 clove garlic
  • ½ tsp mustard
  • ¼ x lemon
  • ¼ tsp salt
  • 200 g chicken breast
  • ½ x romaine lettuce
  • 25 g parmesan

Method

  1. Start by making the bread croutons. Cut bread slices into cubes and place on a baking tray lined with parchment paper.
  2. Add olive oil and sprinkle with a little salt. Mix together and bake in the middle of the oven at 200 degrees for about 8 minutes, until the croutons have acquired a golden brown color. Cool on a wire rack.
  3. Make caesar dressing. Mince the garlic and add in creme fraiche together with mustard, salt and lemon juice. Mix together and set aside.
  4. Fry the chicken fillet in a frying pan. Season with salt and pepper.
  5. Slice romaine lettuce, and fold Caesar dressing into the sliced lettuce.
  6. Top with fried chicken fillet, bread croutons and parmesan.
